Phil is one half of Vanlife Runners, alongside partner Faye. Phil is the cook and driver, and when it comes to running he's the one obsessed with marathoning, although he does love a good trail too.

Edinburgh Marathon '25 Race Report

I went into this marathon expecting - if I was lucky - to run around 3 hours and 5 minutes. I’d trained for a 3-hour finish, but the build-up hadn’t gone perfectly. My gut feeling was that I was capable of running at about 4:20/km pace, not the 4:15/km required for a sub-3.

Pinole Energy Bars

Pinole is a traditional Mexican flour made from roasted ground corn, which is often sold combined with things like chia seeds, cinnamon or cocoa. It's loved by runners as a complex carb so is a good base for homemade energy bars.

Mushroom & Spinach Rice (Pressure Cooker)

It's not really a risotto due to the brown rice, but I sometimes call it that. Whatever, it's filling, tasty and highly nutritious, and thus a great one-pot meal both for van life and for fuelling exercise.

Spiced Sweet Potato & Red Pepper Dal (Pressure Cooker)

A simple curry that we never seem to get bored of and that has endless variations. For us, if you're going to try to avoid meat, you should replace it with things like lentils, so these meals feature pretty much daily on our campervan menu.
